おだやかな吟醸香を帯びた、やや辛口の新酒は、星霜を重ねるごとに藁や古木をイメージさせるような熟成香をまとい、その重厚でとろりとした深みのある味わいは、長期熟成酒として新たな価値を持つにいたりました。
色調も新酒時の淡い黄色にうっすらと緑がさした色から、長期の熟成をうかがわせる濃黄色に変貌をとげ日本の伝統色名より黄蘗(きわだ)と名づけました。
焼肉などの油っこい料理や、ウオッシュチーズ、滋賀の珍味「鮒寿し」など、癖のある料理をつつみこんでお互いの味わいを高めあう包容力のある酒質が特徴です。

This slightly dry new sake has a gentle ginjo aroma, and as it ages, it takes on a matured aroma reminiscent of straw or old wood. With each passing year, it acquires an aged aroma reminiscent of straw or old wood. The profound, thick, and deep flavor of this sake has taken on new value as a long-aged sake.
The color has changed from the pale yellow with a hint of green when new sake is first brewed to a deep yellow that suggests long maturation, and is named "Kiwada" (黄蘗) from the traditional Japanese color name.
It is a sake that is compatible with oily dishes such as yakiniku, washed rind cheese, Shiga's delicacy "funa-sushi", and other unique dishes.
